My Unique Spaghetti Recipe

This is a bougie version of the spaghetti boarding house students make in the dorms. This is only natural as I was one myself. However, this version is healthier and more delicious.

Ingredients

  • 1 pack of Spaghetti
  • 10 big Tomatoes
  • 10 scotch bonnet peppers
  • 1 big Onion
  • Little ginger and garlic
  • 2 green bell peppers
  • 2 red bell peppers
  • 1 fresh fish (tilapia)
  • 2 carrots
  • Eggs (boiled)
  • Coconut oil from Ajimi
  • Beef (if you must)

Preparation

•Blend the tomatoes, scotch bonnet peppers, onion, ginger and garlic together.

•Slices the fish into tiny bits and season with salt, thyme and oregano.

•Add pieces of the fish and steam for the broth to thicken, then add coconut oil (from Ajimi), salt to taste and continue to stir fry for 10 minutes. You can add the boiled eggs to the stew at this point if you want it to absorb the flavour or you can leave for later.

•Boil the spaghetti and drain water.

•Dice the bell peppers.

•Add the boiled spaghetti to the tomato and fish stew and stir on low heat until everything mixes well. Then add the bell peppers and stir.

•Add boiled egg and beef.

Let 👏🏽 me 👏🏽 tell 👏🏽 you 👏🏽, this is soul food. The blend of spaghetti, fish and tomato stew on your taste buds is something to live for and the coconut oil gives it a wonderful flavour. I took it the extra mile by making a cucumber and mango fruit bowl.
