Oat cakes/muffins are my new found love. Yummy, filling and healthy, you definitely can’t go wrong with this gem. The best part about it, is it being – sugar-free, oil-free or butter-free, while it is not a bad thing, I already have enough of it in my diet so it feels good to create recipes with no oil or butter.
Ingredients
- 2 cups of oats flour
- 3 medium-sized banana
- 1/2 cup of milk
- 2 egg
- 2 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of cinnamon (optional)
- 1/4 teaspoon of nutmeg (optional)
- 1 tablespoon of honey (optional, from Ajimi)
- 1 tablespoon of vanilla extract (optional)
Additional for the peanut
- Peanut (groundnut) Butter
- Dried fruits
Additional for The Chocolate Recipe
- 1 tablespoon of cocoa powder
- 1 tablespoon of brownie
- Chocolate chips
Classic Banana Oatmeal Cake
•Grind the oat flour, mix with other dry ingredients and keep. I typically just use the oats, baking powder and soda, cinnamon and nutmeg.
•I find that blending the egg, banana, and milk(or water when I don’t want to use milk) saves time than mixing.
•Once I have wet and dry ingredients ready, I mix and leave for 5 minutes before serving them in the baking cups.
•I preheat the oven and bake at 180°c for 45 minutes (I use a small oven so check if this setting is suitable for you).
Crunchy, Peanut and Banana Oatmeal Muffins
•This is almost the same as the classic oat cake/muffins, I just add peanut butter to the wet ingredients, then add raisins while mixing the dry and wet.
•After serving, I sprinkle groundnut (peanuts) on them before baking.
Chocolate and Banana Oatmeal Muffins

The difference between this and the classic oat muffins are
• I add cocoa powder to my dry ingredients and the brownie while mixing. However, I have skipped adding brownie and decided to stick with just cocoa powder.
•I sprinkle the chocolate chips on the served batter. I couldn’t find chocolate chips, so I cut up some chocolate bars into chips.

I just made a banana, date fiber and coconut cake yesterday and it’s so good. No oil or butter and no sugar. Thanks for sharing your recipe
